Food Production Management

This course equips science and engineering graduates for a career in production or technical management in this industry; students acquire a basic knowledge of the special factors associated with food processing and food quality assurance; they are also equipped with management skills that enable them to contribute to this industry in both the developed and developing worlds; a feature of the course is the strong interaction with the food industry; there is an opportunity to visit a number of food factories and speakers from industry make a significant contribution to the course; many of the research projects involve links with industry.

Entry requirements

2nd Class Honours degree or equivalent in a relevant subject; applicants whose 1st language is not English require IELTS 6.5 (with no less than 6.0 in all other elements) or TOEFL 573 paper-based (with 4.5 in TWE) or TOEFL IBT 87 (no less than 21 in any element).

Course modules

Modules include: introduction to managing operations; core competences in food production management; food factory designs and operations; food and factory design; supply chain management in practice; preservation and manufacture of food; industrial ergonomics: jobs, culture, change; food flavour; fundamentals of hydrocolloid technology; science, technology, arts and business; food manufacturing case studies (5 credit); food manufacturing case studies (10 credit); managing projects; food topics; organisational concepts for biomaterial trading; management science for decision support.
