The course has been developed for individuals working in the brewing industry, providing a key pathway for continuing professional development; it is intended to advance students' understanding of the scientific principles of the brewing process and to develop and demonstrate a cross-process multi-disciplinary approach to optimising brewery unit operations and improving beer quality.
2.2 Honours degree or equivalent in a relevant subject such as biological chemistry, biochemical engineering or other relevant sciences; relevant professional experience is considered; applicants whose 1st language is not English require IELTS 6.0 (no less than 5.0 in any element) or TOEFL paper based 550 with 4.0 in TWE or TOEFL computer based 213 with 4.0 in TWE or TOEFL IBT 79 (no less than 19 in any element) are required.
Raw materials for brewing; brewhouse processes; brewery yeast management;fermentation and yeast handling; beer maturation; brewery waste management and environmental issues; brewing microbiology; beer flavour development and sensory analysis; beer analysis and quality management; packaging of beer;research project; brewing research project.
Assessment is based on a research project.
