The course is built on the basis of sound science and an ability to ensure that it is applied successfully to provide consumers with safe, nutritious and wholesome food. Industry and governments need highly qualified staff who can combine a knowledge of the fundamental science of food with the more practical issues associated with its application.
Applicants are required to have at least an upper 2nd Class Honours degree in a pure or applied science, or equivalent from a university outside the UK.
Modules include: Chemistry of food components; food safety and microbiology; fundamentals of human nutrition; sensory attributes of food; food processing.
